Great cooking class with AARP. Eggplant was the featured item. I've only had eggplant Parmesan or baba ganoush. This was a very simple recipe very quick with diced eggplant onions Slivered carrots and coconut milk with spices. I thought the eggplant was going to break down during cooking but it did not the dish turned out delicious.
